A steak that comes out gray has usually been cooked in its own water. It goes into the pan, the pan temperature collapses, the moisture sitting on the surface boils off before anything else can happen, and by the time the outside is finally hot enough to brown, the inside is already done. Nothing about the recipe was wrong. The heat was.
Browning is not a setting. It is a reaction between amino acids and sugars that only gets moving well above the boiling point of water, which is why a wet surface cannot brown. Every bit of energy going into it is spent turning water into steam instead. Everything below is about getting the surface hot and dry and keeping it that way for the two or three minutes the crust needs.
Dry the surface, then dry it again
Pat the meat with paper towels until they come away almost clean. Then, if you have the time, leave it uncovered on a rack in the fridge for an hour or overnight. Cold moving air pulls water out of the outer millimeter, and that outer millimeter is the entire crust. Salt it before it goes in there, because salt draws moisture out first and the meat then takes it back as brine, so a piece salted the night before is both drier on the outside and seasoned further in.
If all you have is twenty minutes, salt and dry it right before it hits the pan instead. The half-measure is the worst of the three options: salt applied ten minutes ahead has pulled beads of moisture up to the surface and has not had time to take them back.
- Marinades with water, wine, or citrus in them wet the surface faster than a home burner can dry it.
- Meat straight from vacuum packaging has been sitting in its own purge and needs a hard blot.
- A crowded pan turns every piece into a humidifier for the piece next to it.
- Rinsing does nothing useful for a steak and adds water you then have to boil off.
Heat the pan past the point that feels sensible
Most home searing fails here. A pan that looks hot after ninety seconds is hot across the bottom and cool through its walls, and the moment cold meat lands, the cooking surface gives up its heat and does not get it back. Give it four or five minutes over medium-high. A drop of water flicked in should skitter across as a bead rather than hiss and vanish. That skitter is the pan telling you it is past the boiling point with room to spare.
Stored heat is why cast iron and thick carbon steel are the traditional searing pans. They hold enough energy to survive the arrival of something cold and wet. Thin stainless will sear one small piece well and then quit on the second. Nonstick is the wrong tool: the temperatures a good sear wants are the ones that begin to break down the coating, and the coating prevents the browned residue you want anyway.

One layer, with air between the pieces
Two steaks in a ten-inch skillet is one steak too many. The gap you leave is not about the meat touching. It is about giving steam somewhere to go. Crowd the pan and each piece sits in a small humid cloud thrown off by its neighbor, and the whole thing quietly poaches. Cook in batches and hold the first one in a warm oven, or use a bigger pan and accept that the burner may not heat all of it evenly.
Oil the meat rather than the pan if smoke is a problem in your kitchen. A thin film wiped onto the surface of the steak fills the microscopic gaps between meat and metal, which is what oil is actually for here, without leaving a pool that scorches and sets off the alarm.
Then leave it alone
A crust needs continuous contact. Every time you lift a steak to look underneath, you break that contact and let the surface cool, and the two minutes start over. Put it down and do not touch it. When it is ready to turn it will release on its own: meat grips hot metal at first and lets go as the crust sets, which is a better readiness signal than anything you can see from above.
- Heat the dry pan four to five minutes, until a bead of water skitters instead of hissing.
- Add a thin film of a neutral high-smoke-point oil and swirl it until it shimmers and thins out.
- Lay the meat down away from you and leave it for two full minutes without moving it.
- Turn once, sear the second side, then drop the heat to finish anything thicker than an inch.
- Pull it a few degrees below your target temperature, because it keeps climbing off the heat.
Doneness, honestly
An instant-read thermometer settles more arguments than any amount of poking. USDA guidance for whole cuts of beef, pork, lamb, and veal is 145°F with a three-minute rest, and that is the number to follow when you are cooking for someone whose immune system you would rather not gamble with. Plenty of cooks pull a steak earlier, around 130 to 135°F for medium-rare, and that is a decision about risk as much as taste. Worth making deliberately rather than by accident.
Ground meat is a different case and not a matter of preference. Grinding takes whatever was on the surface and distributes it through the whole batch, so burgers go to 160°F regardless of what the color inside suggests. Poultry, whole or ground, goes to 165°F.
A thick steak also keeps cooking after it leaves the pan, carrying a few degrees further as heat moves from the hot exterior toward the middle. Five minutes of rest lets that finish and lets the juices settle so the board does not flood the moment you cut.
The brown stuff stuck to the pan is the point
Whatever is welded to the bottom afterward is concentrated flavor, and it dissolves in liquid. Pour off the excess fat, put the pan back over medium heat, add a splash of wine, stock, or plain water, and scrape while it bubbles. Thirty seconds later you have a sauce, or the start of one. Searing well and then washing that pan immediately is throwing away the better half of what you just made.
