Cast iron attracts more folklore than any other object in a kitchen. Never use soap. Never cook tomatoes in it. Never wash it at all, just wipe it out with a paper towel and let the layers build. Most of those rules are half-remembered instructions for pans that were seasoned with animal fat and scrubbed with lye soap, which is not what is under your sink.
The useful version is much simpler. Seasoning is not oil that has soaked into the metal, because iron is not porous in any way that matters at this scale. It is a thin layer of oil that has been heated past the point where it breaks down and cross-links into a hard film bonded to the surface. Think varnish, not grease. Hold that picture and most practical questions about cast iron answer themselves.
Why your pan is sticky
Tacky, faintly gummy patches are the most common complaint, and they almost always mean the same thing: too much oil, not enough heat, or not enough time. Oil taken hot enough to cure sets hard. Oil that only ever got warm turns into something between a resin and a glue, and it will still feel that way a month later.
The fix is not more oil. Put the pan back on the burner, dry and empty, until it smokes lightly, and leave it there a few minutes. The excess either cures or burns away. If patches stay gummy, scrub them back with coarse salt and a rag, or steel wool if it comes to that, and rebuild the layer with an amount of oil that feels like a mistake. Wipe it on, then wipe it off as though you changed your mind. What stays behind in the texture of the surface is the correct amount.
- Tacky after cooling: too much oil, or never heated enough to cure it.
- Black flakes lifting off in sheets: layers built too thick, or built over an unclean surface.
- Food welding itself to the center: usually a preheating problem, not a seasoning problem.
- Dull gray patches after a long tomato sauce: the seasoning stripped there. Wipe on oil and heat it.
Everyday care takes about four minutes
- Wash it while it is still warm, with hot water and a stiff brush. Modern dish soap is a detergent, not the caustic stuff the old rule was written about, and a little of it will not hurt a cured surface.
- For anything stuck on, boil an inch of water in the pan for a minute, then scrape with a wooden spatula or a chainmail scrubber.
- Dry it on the burner, not on a towel. A pan that feels dry to the hand still holds enough water to bloom rust by morning.
- While it is warm, wipe a few drops of oil across the cooking surface with a paper towel, then wipe most of it back off.
- Store it where air can reach it. Stacked with a paper towel between pans is fine. Sealed in a damp cupboard is not.
That is the entire routine, and it takes less time than drying a set of wine glasses. Cast iron has a reputation for being demanding mostly because skipping the drying step has such a visible consequence the next morning.
Rust is a setback, not an ending
Orange bloom on a neglected skillet looks fatal and essentially never is. Underneath it there is solid iron, and a great deal of it. Take steel wool and a squirt of dish soap to the rust, work until the surface is a uniform dull gray, rinse, dry on the burner immediately, and re-season. A pan that spent a winter in a damp garage can be back in service the same afternoon.
The one condition worth walking away from is a crack, usually a hairline running from the cooking surface up the wall. Cast iron is brittle, and cracks come from thermal shock: a screaming hot pan hit with cold water, or a cold one set on an already blazing grill. Once it has cracked it will leak, and it will keep going.

Re-seasoning from scratch
The oven method is reliable because the heat surrounds the pan instead of concentrating where the burner is. Coat the whole thing, inside and out and up the handle, with a thin film of neutral oil, then wipe it back until it looks dry rather than shiny. Set it upside down on the middle rack with a sheet pan underneath, bake it hot, in the range most ovens label 450 to 500°F, for an hour, then let it cool in there. That is one layer. Three thin layers beat one thick layer every single time.
Which oil you use matters less than the arguments suggest. Any oil will polymerize once it is taken past its smoke point. Flaxseed cures hardest and is also the most prone to flaking off in sheets a few months later, which is why the enthusiasm for it has cooled. A cheap neutral oil, applied thin and applied often, is what most hard-working pans are actually running on.
What genuinely damages a pan
- The dishwasher: detergent plus a long hot soak strips the film and leaves the iron sitting wet.
- The sink. A pan left to soak while you eat dinner will have rust freckles by dessert.
- Cold water into a ripping hot pan, which warps carbon steel and cracks cast iron.
- Long acidic simmers on a young pan. Twenty minutes of tomato sauce is nothing to a mature surface and will strip a new one.
It is not a nonstick pan, and it does not need to be
Even a beautifully cured skillet will grab an egg if the egg goes in cold. Iron conducts heat slowly and unevenly, with a hot ring where the burner sits and cooler edges, so it wants a few minutes on medium before anything touches it, plus a moment for the fat to come up to temperature. Give it that and eggs slide. Rush it and no amount of seasoning will rescue you.
The other half of the bargain is that a working pan is not supposed to look new. It should be black, matte, and faintly uneven, with a slick center where the food always lands. Four nights of cooking a week produces a surface that no amount of ceremonial oiling can imitate, which is the one part of the mythology that turns out to be true.
