Camp cooking is mostly a solved problem until the weather turns. Then the differences between stoves stop being preferences and start being the reason you get a hot drink or don't. Cold drops the pressure in a gas canister. Wind carries away most of the heat before it reaches the pot. And the sensible reaction to both, which is to move the whole operation inside the tent, is the one thing you must not do.
Start with the rule that has no exceptions
Do not run a stove inside a sealed tent, a closed vehicle, an awning zipped shut, or a snow hole. Any flame burning in an enclosed space produces carbon monoxide, which has no smell, no color, and no early warning. It makes people drowsy, and drowsy people in a tent go to sleep. This is not a rare theoretical hazard; it is the way stove accidents kill.
Experienced campers do sometimes cook in a porch during foul weather, and if you do, the outer door is wide open the whole time, the stove is never left burning while you look away, and you never do it when you are tired enough to nod off. A yellow, sooty flame means incomplete combustion and more carbon monoxide, so treat it as a signal to stop and get outside. The safe answer is always outside, with your back to the wind.
The fire risk deserves a line of its own. Tent fabric burns fast, and a pot of boiling water going over inside a small tent is a serious scald with no easy way out. There is a reason the porch is where the argument happens.
Three kinds of stove, three sets of trade-offs

For most camping in most weather, a canister stove is the right answer and everything else is a solution to a problem you do not have. The reason to look further is cold. As a canister empties and chills, the pressure inside drops and the flame weakens, and near freezing the butane in the mix largely stops contributing at all. You can slow this down by keeping the canister in an inside pocket before use, or standing it in a shallow dish of water, since even cold water carries heat into it.
Never apply a flame to a canister to warm it, and never place one near a fire. If you regularly cook below freezing, the honest fix is a remote-canister stove that runs the fuel as liquid through a preheat tube, or a liquid-fuel stove that does not care about ambient temperature at all.
The windshield trap
Wind is the single largest influence on how much fuel a trip needs, and the instinctive fix is to wrap a foil shield all the way around the stove. On a canister-top stove, where the burner sits directly on the gas, that traps heat around the canister and can push it well past a safe temperature. Do not do it.
Shelter the stove instead: put it behind a rock, a wall, or your pack, or use a partial shield that leaves the canister side open. Remote-canister and liquid-fuel stoves keep the fuel off to the side, so they can take a full wrap-around shield safely, and that is a large part of why serious cold-weather cooking uses them.
How much fuel to take
Published figures are close to useless because they assume still air, warm water and a lid. The reliable method takes twenty minutes at home: weigh a canister, boil the amount of water you would actually boil for one meal on your own stove in your own pot, and weigh it again. Now you have a real per-boil figure for your setup, and you can multiply it by the number of hot meals and drinks you want, then add a margin for wind and cold.
Two habits cut consumption more than any equipment choice. Use a lid, every time, because most of the heat leaves the top of an uncovered pot. And start with cold water at the volume you need rather than boiling a full pot and pouring half away.
The accident that actually happens
Not explosions. Scalds. A tall narrow pot on a small burner, on ground that turned out not to be flat, and someone catches it with a sleeve. Cook on the flattest surface available, use a pot whose base is wider than it is tall, and keep the handle turned away from where people walk. On soft ground or snow, put a flat stone or a piece of foam board under the stove so it does not sink and lean as things warm up.
Water
Boiling is the most reliable treatment there is. Bringing water to a rolling boil is enough at normal elevations, and you give it a few minutes at altitude where water boils cooler. Filters are faster and better for drinking through the day; check what the one you own is rated to remove, and pre-filter silty water through a bandana or it will clog. Chemical tablets are light and slow, and they need considerably longer in cold or cloudy water than the packet's headline time suggests.
What to actually cook
- For one or two nights, take real food. Cured meat, hard cheese, good bread and something fresh beat any dehydrated meal, and the weight penalty barely registers over a weekend.
- For longer trips, calorie density is what you are optimizing. Fat carries more than twice the calories per ounce as carbohydrate, which is why olive oil, nuts and cheese quietly do the heavy lifting.
- Repackage everything at home. Cardboard and air are the two heaviest ingredients in most camp food, and you carry all the packaging out anyway.
- If your stove only boils, plan around that honestly. Anything needing a genuine simmer will weld itself to the bottom of the pot.
- Cold soaking, where you rehydrate in a sealed jar as you walk, is a real option in summer. It is grim in winter, when the entire point of dinner is that it is hot.
Wash up well away from streams and lakes, strain out food scraps and pack them out rather than scattering them, and follow the local rules on food storage, which exist because of specific animals in specific places rather than as general advice. A tidy camp is mostly about the next person and the wildlife, but on a long trip it is also about not spending the third evening cooking in a mess you made on the first.
